Avocado, Egg & Fig salad
Simplicity is a key actor in anyone changing their diet.
Taking hour our of our busy schedule is often not possible. So instead of a few creative tweaks to create quick nutritional meals we reach for the sandwich or pasta. It's quick, convenient but totally empty of any solid nutriton.
This is a super easy salad that you could knock together in the time it takes to boil an egg.....
Egg, Avocado spinach salad

Total time: 10 mins
1 egg Boiled
1 cup Organic spinach leaves
1/2 ripe medium-large avocado
2 ripe tomatoes
1 whole fig
1/2 grated carrot
Boil and egg & de-shell.
Grate garlic over the spinach and Sautee in a pan with tablespoons of water.
1/4 the tomatoes.
Use a peeler to create long thin strips of courgette. If you have a spiraliser then use this.
1/2 and avocado and remove from skin. Leave whole.
Grate 1/2 carrot onto the avocado & sprinkle sunflower seeds over this.
Slice a fig on the side for a sweet twist.
Add olive oil and Tahini and lemon juice to flavour.
Himalayan pink salt and pepper to your liking.
Plate up and enjoy....
