Avocado, Egg & Fig salad

Simplicity is a key actor in anyone changing their diet.

Taking hour our of our busy schedule is often not possible. So instead of a few creative tweaks to create quick nutritional meals we reach for the sandwich or pasta. It's quick, convenient but totally empty of any solid nutriton.

This is a super easy salad that you could knock together in the time it takes to boil an egg.....

Egg, Avocado spinach salad

Serves: 1

Ingredients

  • 1 egg Boiled

  • 1 cup Organic spinach leaves

  • 1/2 ripe medium-large avocado

  • Grated Garlic

  • Spiralled Courgette

  • 2 ripe tomatoes

  • 1 whole fig

  • 1/2 grated carrot

  • Sunflower seeds

Instructions

  1. Boil and egg & de-shell.

  2. Grate garlic over the spinach and Sautee in a pan with tablespoons of water.

  3. 1/4 the tomatoes.

  4. Use a peeler to create long thin strips of courgette. If you have a spiraliser then use this.

  5. 1/2 and avocado and remove from skin. Leave whole.

  6. Grate 1/2 carrot onto the avocado & sprinkle sunflower seeds over this.

  7. Slice a fig on the side for a sweet twist.

  8. Add olive oil and Tahini and lemon juice to flavour.

  9. Himalayan pink salt and pepper to your liking.

  10. Plate up and enjoy....
